Banana Bread

Yummy Banana Bread! :D Thanks to Sheena. I got this recipe from one of my good friends.  How easy it is to make this!  Now, im thinking i should make my own bread from now on without the banana of course. :D  

I made BLUEBERRY bread also and it was so YUMMY and moist!

Ingredients

  • 1 cup mashed very ripe bananas
  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • 1/2 cup sour cream or buttermilk ( I used regular milk because my buttermilk was still frozen)
  • 2 eggs
  • 1 1/2 cup all purpose flour ( I used whole wheat flour)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Method

  • In a blender combine bananas, sugar, oil, sour cream and eggs until well combined.
  • In a large mixing bowl, mix together flour, baking powder, soda and salt.
    Add banana mixture, mixing just until combined.
  • Pour into greased 9X5 inch loaf pan.
  • Bake in 325 F oven for 1 to 1 1/4 hours or until tester inserted into centre comes out clean (test at the 1 hour mark to gauge doneness).
  • Cool in pan for 10 minutes before turning out onto rack to cool completely.
  • Slice to serve, butter if desired. If any left over, try it toasted the next day!Makes 1 loaf.


Canadian Bacon Sandwich

Ingredients

  • Nonstick cooking spray
  • 4 eggs and 4 egg whites
  • 1/4 cup minced chives
  • 1/4 cup minced parsley
  • 4 whole-wheat English muffins
  • 4 1/2-inch round slices Canadian bacon
  • 1 large beefsteak tomato, sliced into 1/2-inch thick slices

Directions

  • Crack eggs and egg whites into a bowl and whisk.
  • Add chives and parsley and stir to incorporate.
  • Spray a large nonstick skillet with cooking spray.
  • Ladle 1/4 egg mixture into skillet and cook, omelet style, until eggs are cooked through, about 1 to 2 minutes per side.
  • Slide omelet onto a plate and repeat with remaining eggs; cover with foil to keep warm.
  • In same skillet, heat Canadian bacon until warm, about 1 to 2 minutes per side.
  • Toast English muffin. Fold omelet in to fit English muffin, then place omelet on 1 muffin half.
  • Top with a bacon slice, then tomato, and then top with other muffin half.
