Sweet Potato Balls

Ingredients

  • corn oil or vegetable oil, for fying
  • 1 cup mashed, roasted and peeled sweet potato
  • 1 cup whole milk fresh ricotta cheese
  • 1/4 cup confectioners’ sugar, plus more for dusting
  • kosher salt and black pepper
  • 1/2 cup self-rising flour

To roast sweet potatoes

  • Preheat the oven to 400 degrees F.
  • Place the potatoes (2 Large potatoes) on a baking sheet and roast or bake in the oven for about 40 to 60 minutes or until soft.
  • Peeled and mashed potatoes.

Method

  • Heat about 3 inches of oil in a deep heavy pot, fitted with a deep-frying thermometer, to 365 degrees F.
  • In a large bowl, combine the potato, ricotta, sugar, salt and pepper to taste, with a hand mixer until smooth. Fold in the flour, a little at a time, until just combined.
  • Working in batches to avoid crowding the pot, drop heaping teaspoons of the batter into the hot oil.
  • Fry until golden brown, turning as needed to brown evenly, about 1 to 2 minutes.
  • Drain on paper towels and dust with confectioners’ sugar and a pinch of salt.

Apple Pie

The pastry was flaky and the filling was juicy and tasty! This is definitely delicious!!!!  I made my own crust but next time i’ll try to buy the refrigerated one :D




Ingredients 

Pie Crust:  (TIPS: You can BUY a refrigerated ready made pie crust, the rolled one, not the frozen one)

  • 2 cups all purpose flour
  • ¾ teaspoon salt
  • 2/3 cup butter or shortening
  • 3 tablespoon coldwater

Apple Filling:

  • 5 apples, peeled, cored and sliced
  • ¾ cup sugar
  • 2 tablespoon all-purpose-flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoon butter, softened

Method:

To make the Crust:

  • Combine the flour, salt and shortening in mixing bowl.
  • Add cold water by the spoonful and blend until the bowl starts to clean itself as you work the dough.
  • Divide dough in half and shape each into a ball. Flatten each into a 4-inch circle.
  • Dust rolling pin and work surface lightly with flour. Roll dough to a uniform thickness. Roll to a circle about 1-inch larger than upside down 8-inch pie plate. Carefully place one dough circle into pie plate and gently press into form of plate. Trim excess dough around the edge with the back of a knife.

Preheat oven to 400 degrees F.

Filling:

  • Combine sliced apples with sugar, flour, cinnamon and nutmeg.
  • Place apple mixture in pie shell and dot with softened butter.
  • Place second pie crust on top and form to the edges of the pie plate.
  • Cut slits in the top crust to allow for steam to release in oven. Bake for approximately 45 minutes to an hour or until pie is fully baked and apples are tender.
